Crayfish, The Other Red Meat?
Crayfish, crawdads, craws what ever you call them they are all the same miniature lobster looking thing. They freak most little girls out and intrigue little boys. How many times have you seen a little boy carrying a crayfish around? I was one of them. As the years wore on and after reading countless articles on small mouth bass eating crayfish I started catching them to use as bait. But after the hassle of catching them and trying to rig them I gave up on them. Not to mention the rusty crayfish problems the lakes in our own area are having. Which was just more reinforcement for me not to transport them around. A friend and myself decided to head over to Whitefish Lake for a night bite. We brought everything we needed to fish from shore for a whole night. We set up and were using live bait slip sinker rigs to settle on the bottom. I took the flash light and went to re cast my line. This is when I noticed the bottom of Whitefish Lake crawling with crayfish! The young boy was brought out in me and I had an idea. I took a small piece of line and a jig and baited with a small worm. I targeted the larger crayfish using the flash light. At night the crayfish are roaming about and you don't have to flip over rocks to find them. Just put the jig in front of them and they held on to it for all they were worth. You could pull them right out of the water and shake them off the hook into a bucket. Once I had a couple dozen I went back to the fire and put a pot of water on to boil. Once the water was boiling I dumped the crayfish into the pot. They turned red almost instantly. It only took a few minutes for them to cook. In those few minutes I took the opportunity to melt some butter. My friend started to take immense interest in what I was doing. When the miniature lobsters were done cooking I let them cool off for about a minute. The claws, which are very small, do hold some meat but the main portion of meat comes from the tail. Shelling them is relatively easy. But the taste.......And what does a pound of lobster go for now anyways? After that two dozen were done we set out to catch more. They were that good. Next time you get a chance and can invest a little time, you have to try the other red meat. Roger Mayer.
